My parents have a really nice afternoon tradition. Every day around 4 or 5 in the evening (or whenever my mom is home from work), they have a Greek coffee made on the stove using the most fragrant Greek coffee grounds. I’m not a coffee drinker, but I love the deep, slightly sweet coffee smell.
Anyways, I’m not sure how they came up with this, but they toast some regular sandwich bread, spread creamy mascarpone cheese on it, and top it with sliced bananas and a drizzle of Greek honey.
The warm toast and cold creamy mascarpone are such a divine combination. Add to it the balance of sweet and savory you get with the bananas and honey with the slightly tangy and creamy mascarpone, and it’s like the best frickin piece of toast in your life.
To start your weekend out right, have a Honey Banana Mascarpone Toast with your loved ones over a hot coffee. Enjoy!
- 2 pieces of sandwich bread
- 1/4 cup mascarpone cheese
- 1 banana
- Toast bread until lightly golden brown (follow your toaster directions). When done, spread the mascarpone cheese on both pieces. Top with sliced banana and drizzle with honey.
